1. The Sound Before the Smell

A steel pot, a rooftop in Jaipur, and the evenings that became Brinita.

I remember the sound before the smell. A steel pot clinking softly on the stove. Evening light turning gold over our rooftop in Jaipur. That sound meant one thing — Dadaji was making something.

 

He never announced it. He would just stand by the window for a minute, looking at the sky. Reading something only he could see. Then he would walk to the shelf where the herbs lived — small jars, cloth pouches, tulsi, ajwain, saunth — and start choosing.

Some evenings it was warm and spiced, thick with ginger, for a day that had a chill hiding in it. Other evenings it was light and cooling, for the dry, dusty days when everyone’s throat felt raw by sundown. He never got it wrong. Not because he followed a recipe. Because he was watching us, and watching the weather, the way some people watch the news.

I didn’t understand any of it back then. I just knew that whatever cup he gave me, I drank without question. It tasted like being taken care of.

We never called it a remedy. We never even called it Ayurveda — that word felt too big for what was happening in our kitchen. It was just Dadaji, doing what Dadaji did.

My mother was there too, quietly writing it all down over the years. A diary that slowly filled with what worked, what he taught her, what she learned on her own. Neither of them thought of it as something to preserve. It was just how our family looked after each other.


What We Carried Forward
